Simple Lunch Box Treats

Beef and Cheese Roll-Ups
Spread a small amount of vegetable-flavored cream cheese on a flour tortilla. Top with shredded carrots and shredded Jack cheese. Layer a lettuce leaf and deli roast beef evenly on cheese, leaving a border around the edge. Roll up tightly and wrap in plastic wrap. Refrigerate at least 30 minutes, and then slice into individual rolls.

Salad Bar Lunch
Pack each item for a salad separately, along with a disposable bowl, allowing your child to make his or her own salad. Some ideas for salad fixings are shredded spinach leaves, ham chunks, shredded cheese, grape tomatoes, sliced carrots, broccoli or cauliflower florets, pineapple chunks, sliced strawberries, croutons, and a small container of salad dressing. Include some whole wheat crackers for a complete meal.

Jelly Roll Sandwiches
Remove the crust from a slice of whole wheat bread, place between sheets of waxed paper, and gently flatten with a rolling pin. Spread the bread with tuna salad, peanut butter and jelly, softened cream cheese with ham, or any other topping your child prefers. Carefully roll up the bread jelly-roll style. To seal the edge of the bread closed, use a dab of butter or a toothpick.
