Want to Know How to Better Preserve Your Herbs During the Summer? Freeze Them! Here Is How

As we inch our way farther into spring, everyone is hyped about reviving their herb gardens outside of their apartment homes in Austin, Texas. However, it can be quite easy to go overboard and grow more than you know what to do with. The best way to preserve extra herbs is by freezing them. So, if you have a garden full of herbs, and do not know which will freeze best, here are some that do particularly well in the freezer of your fully-equipped kitchen:

• Basil
• Borage
• Chives
• Dill
• Lemongrass
• Mint
• Oregano
• Sage
• Sorrel
• Sweet Woodruff
• Tarragon
• Thyme

Now, here is how to freeze them:

1. To start, make sure your herbs are clean. Give herbs a good wash under cool water, then pat them dry.
2. Spread clean, dry herbs in a single layer on a cooking tray, and put the pan in the freezer for about one hour, or until frozen.
3. Put the frozen herbs into labeled, sealed containers. Be sure to push all the air out of the containers before sealing them, and store them in the freezer for one to two months.

Final tip: In most cases, you don't need to thaw herbs before use. When frozen herbs thaw, they will get darker and limp, so we recommend adding them to recipes while still frozen. They'll do best in dishes, like soups, casseroles, or breakfast skillets rather than fresh uses, such as pesto, or to garnish a recipe.
